Honey Ginger Jelly Recipe ~ Makes a great gift!
Honey Ginger Jelly
2 packages of powdered pectin
5 cups of organic white grape juice
7.5 cups locally sourced organic honey
4 tbs of fresh grated ginger
Put the pectin and organic white grape juice into an 8 quart or larger stainless pot. Blend the ingredients over medium heat height heat. Cook until bubbles begin to form around the edge of sauce pan. Add the honey and ginger stirring constantly with a wooden spoon. Stir until bubbling, but don't allow a full boil. Skim off the foam and remove from the heat. Skim of more foam as necessary. Pour into hot sterilized jars, put lids on, and put into a boiling hot water bath for five minutes. Remove with canning tongs and allow to seal and jell.
